You give up: The probe on its own is the entry option, and it is the one with a catch: reading it away from the cook means keeping a phone in Bluetooth range. The kits resolve that rather than working around it — the Booster extends range over WiFi and the Display gives it a screen of its own, which is why they are the SKUs to carry.
