Real smoke without heat is the whole point. The Smoking Gun burns a pinch of wood chips in a small chamber and a battery fan pushes the smoke down a silicone hose into whatever you’ve covered: a bowl of butter or cream, raw vegetables, a dish of salt, a cocktail under a cloche. Nothing gets warm, so nothing changes texture. Fat takes smoke fastest, which is why butter and cream are the best place to start.

It runs on four AA batteries, has two fan speeds for a gentle or a heavy smoke, and comes with hickory and applewood chips to try. The flavor sits on the surface and fades, so it’s a finishing touch done just before serving, not a cure or a preservative, and the capacity is a bowl or a glass, not a side of salmon.

What this unlocks

cold smoke on demand: smoke flavor on raw vegetables, butter, cream, salt or a cocktail without cooking them, by covering the bowl or glass and filling it with smoke

What it saves you: firing up a smoker for jobs where heat would ruin the texture

What you give up: the flavor sits on the surface and fades, so it's a finishing touch, not a cure or a preservative; capacity is a bowl or a glass, not a side of salmon
