Drying is the step that turns a vegetable chip from greasy to glassy. Slice thin, blanch, and dry the slices fully on the trays, then fry them at 320–340°F (160–170°C). With no water left to boil off they don’t spit, they crisp fast and they take on less oil, and 15 to 20 minutes back on the trays afterward strips what oil is left. The same low, dry heat turns a purée spread thin into a vegetable leather or powder at 113–122°F (45–50°C), and dries cooked wild rice or sorghum ready to puff in hot oil.
Six trays means a full batch at once rather than an oven propped open all afternoon. It is big, and most jobs take hours. Dried crisps soften fast in humid air, so pack them airtight with a food-safe desiccant, and only once they’re cool.
chips that are lighter and crisper because they're dried before they're fried: thin, blanched slices dehydrated fully, fried at 320–340°F (160–170°C) without spatter, then 15–20 minutes back on the trays to strip the oil; also puffed wild rice and sorghum, and vegetable powders and leathers dried at 113–122°F (45–50°C)
