This is a charcoal rig with a brain. The gravity-fed hopper feeds lump or briquettes down into the firebox as the digital controller calls for heat, so you’re not standing there working vents at 2am on a brisket. Same unit swings from a low, steady smoke to a hard sear hot enough for a ribeye, without swapping equipment or rebuilding a fire. You still get real combustion and real smoke flavor, just without the constant tending charcoal usually demands. For a kitchen or a backyard setup running long cooks alongside quick ones, that’s one machine covering two jobs. Less fire-minding, more time actually cooking.
I run the 600 wood-only rather than the charcoal-plus-wood Masterbuilt advertises. The hopper feeds splits fine and you get real smoke instead of charcoal with a wood accent, which is the whole reason to own a gravity feed over a pellet grill. Pair it with a Fireboard for probe logging and a conversion kit and it holds a temperature overnight without me getting up to it. The design and the technique are the same across the range — only capacity changes.
- combustion-predictive-thermometer
- conversion kit (third-party, we do not carry one yet)
On a line or in a backyard doing volume, the thing that kills charcoal cooking is attention. You can't run a shift and also nurse a fire. This setup automates the part that used to require a body standing next to it, which means it earns a spot as the one piece of equipment that can do an overnight pork shoulder and then sear off orders a few hours later without a second setup or a second fuel source.
