18x13, 20-gauge uncoated aluminum, 1.6 pounds empty. Thin enough to heat fast, heavy enough to hold flat under a hotel pan of vegetables or a full run of cookies. Uncoated aluminum means bare metal contact, so fond releases clean and edges of roasted vegetables actually brown instead of steaming. It’ll pick up a warp eventually with high heat and cold rinses, but that’s years out, not weeks, and it stays functional long after it stops looking new. Buy two or three. One lives under the roast, one catches sheet-pan dinners, one’s always in the dish rack waiting its turn during a busy week.
This is the pan you don't think about, which is exactly the point. It fits every rack in a standard oven, stacks clean in a low shelf, and does roasting, baking, and reheating without asking for a specialty tool. A line cook doesn't baby it and it doesn't need babying back. Buy it in multiples and it becomes the default answer to 'where do I put this.'
