Gravity Series 1150 Digital Charcoal Grill and Smoker
Charcoal flavor without babysitting the fire all night

This is a gravity-fed charcoal rig built for cooks who want real smoke without standing over a stick burner. Load the hopper, set the digital controller, and the unit feeds coals down as needed to hold temperature steady for hours. That means you can run a long brisket cook overnight and still show up for service the next morning. The grate space handles a full cook for a family or a small event, and the charcoal itself does the flavor work that gas and pellets can’t fake. It cleans up fast, holds heat well in cold weather, and gives you the option to run low and slow or push it hot for a quick cook when you need one.
I run the 600 wood-only rather than the charcoal-plus-wood Masterbuilt advertises. The hopper feeds splits fine and you get real smoke instead of charcoal with a wood accent, which is the whole reason to own a gravity feed over a pellet grill. Pair it with a Fireboard for probe logging and a conversion kit and it holds a temperature overnight without me getting up to it. The design and the technique are the same across the range — only capacity changes.

In a working kitchen, time is the real cost, not the fuel. A rig that holds its own temperature for a long cook frees a cook up to run the rest of the pass instead of babysitting a fire. This earns counter space because it does the unattended overnight cook reliably and still gives you real charcoal flavor when the ticket calls for something cooked hot and fast.
