A Y-peeler takes the skin off in long strokes toward you, and this is the one found in more professional kitchens than any other: light, sharp, and cheap enough that cooks keep a few. It runs down a carrot, an apple or a butternut squash without grabbing, and the tip digs out a potato eye.
Hand-wash it and dry it straight away; it is not a dishwasher tool. At this price, replacing it when the blade finally dulls is part of the deal.
