Nine inches, straight sides, a clamp that snaps tight and holds the seal through a full bake. Anodized aluminum walks the line between light enough to handle one-handed and rigid enough that it doesn’t warp under a cheesecake water bath. The bottom releases clean without a wrestling match, which matters when you’re plating a torte to order and can’t afford a cracked edge. Lives in the dessert station, not the back shelf. Good for cheesecake, mousse cakes, deep-dish anything that needs to come out of the pan looking like it did in the kitchen, not like it fought its way out.
A pastry cook doesn't think about the pan until it fails at the pass, and that's the whole point of this one. It does the boring job right every time, so the cheesecake comes out with a straight edge and the dishwasher doesn't dread the clamp mechanism. That reliability is why it earns a permanent spot on the rack instead of getting replaced every season.
