Plain, all-stainless locking tongs, and the pair you find hanging off the oven door in more American restaurant kitchens than any other. They turn a chop, lift a tray of roasted vegetables, pull pasta into a bowl and plate it, and the lock closes them flat for the drawer.
The spring is replaceable and the whole thing goes through a commercial dishwasher. The steel heads are hard on nonstick, so keep them for stainless, cast iron, carbon steel and the grill.
