Sani-Safe 6" x 3" Dough Scraper (19783)

The cheapest thing on any station and one of the most used. The flat steel blade slides under a pile of chopped onion and carries it to the pan in one pass, so the knife edge never gets dragged sideways across the board. Then it scrapes the board clean for the next job.

It does the same for bread and pastry: cutting dough into portions, lifting a sticky round off the bench, and scraping the bench afterwards. Dexter-Russell’s Sani-Safe handle is the textured one used in commercial kitchens, so it holds in a wet hand.
