We earn nothing on this one. It’s here because it’s good, and the link goes to Anova.
This is a combi oven and a sous vide circulator built into one steel box. Set exact temperature and humidity, walk away, come back to protein that’s the same doneness edge to edge, every time. Steam mode keeps proteins from weeping on the pass, and the probe lets you pull by internal temp instead of guessing on time. It holds enough for a real batch, not a home-cook test run. Runs quiet enough to sit behind the line without adding to the noise. Cleanup is straightforward stainless, no gaskets to chase down. For a kitchen doing sous vide finishing or holding product through a rush, it does the job of three machines without three footprints.
A low, steady oven is what makes the restaurant method work at home: bring the center up around 140°F (60°C), pull a degree or two early, and sear hard for seconds. If dinner runs late, set the oven to the meat's final temperature and it holds there, which is right for pork at 145°F (63°C), poultry at 165°F (74°C) or anything else finished at 140°F (60°C) or above. Steak or lamb pulled below that gets its rest, then the sear, then the plate; never a hold.
A working kitchen doesn't need another single-purpose gadget taking up counter space. This earns its spot because it does the reheat, the hold, and the sous vide finish that used to need three separate machines, and it does it with enough control that a cook can set it and trust it through service instead of babysitting a water bath.
